be solved with special molecules that can link these two substances to form an emulsion. Recall that these
special molecules are called surfactants (surface active agents). They have two parts: one part bonds with
water and one part bonds with oil. When the salad dressing is shaken or stirred, these surfactants are
distributed through the mixture. This action brings the oil and water together - but only temporarily. After a
period of time, the oil will again rise to the surface and the dressing will separate into layers.
