This helps pepsin do its job more efficiently because the stomach supports its main goal. Should the pH be changed to 9, the stomach would be basic, not acidic. Pepsin's goal would be block by the basic stomach lining, which counters the main goal of pepsin, not digesting your food the entire way. Therefore, pepsin and the stomach would cancel out, rendering pepsin useless and your food not digesting all the way.
