Dehydration means removal of water molecule and synthesis means to join. so in this process called Dehyration synthesis when monomers are covelantly bonded a water molecule is removed from them. Each carbohydrate or organic monomer has a hydroxyl group (-OH) on one side and hydrogen group (-H) on the other side.

This basically means that a water molecule is removed when the monomers are bonded together.
