Oil has been a nonpolar compound and has been immiscible with polar solvents such as water. The addition of nonpolar solids or the emulsifier results to be dissolved in the oil.
The oil being nonpolar in nature has been repulsive towards the polar solvents or the compounds. The nonpolar solids or solvents can be attracted or dissolved in the nonpolar solvents by the bond formation or micelle formation as in emulsifiers.
Thus the unknown solid has most likely been a nonpolar emulsifier.
