Meat is red before you cook it and as you cook the meat it slowly loses its redness/pink. If meat is red or pink in the middle that means it is either uncooked or undercooked. There are types of ways to cook meat (typically steak) where it is a little pink or red on the inside but it’s still cooked.
It turns red while cooking because the blood inside the meat comes out will your cooking or grilling it to give it more flavor
