Protein quality is the ability of a dietary protein to meet needs for regular metabolism and growth of body tissues. The two criteria that determines quality of protein are : protein's digestibility and amino acid profile.

Quality of a protein is evaluated by assessing its essential amino acid composition, digestibility and bioavailability of amino acids.

There are various techniques used to evaluate the quality of protein. Some of the common methods are based on the analysis of total nitrogen content in the sample such as the Dumas method  and the Kjeldahl method .
