Dissection - The act of cutting up a plant or an animal for study.
Surgery - The treatment of injuries or disorders of the body using incision or manipulation.
The difference is that surgery is performed upon living beings in an attempt to improve their quality of life and to fix/improve the injury or disorder that is troubling them. Dissection is cutting up a dead animal or plant so that you can study it.
