The process is mainly used in liquids, by heating them up in order to kill any pathogen agents or "germs" that might spoil the food.
There are 3 types of pasteurization, depending on the temperature, time and method:
- VAT: heating up the liquid up to a temperature of 63ºC. After, let it cool for half an hour and transfer it to a sealed container.
- HTST: heating the liquid up between 71-89ºC for 15 seconds.
- UHT: this is known as ultra pasteurization, in which the liquid is heated up to 137ºC for 2 seconds.
In general, pasteurization is mainly used for dairy products.
