Unsaturated
fats have at least one double bond as a part of their structure. These bonds
are generally in the cis-conformation in naturally occurring fats.
In
the cis conformation, H atoms are on the same side of the double bond, whereas
in the trans conformation, they are on opposite sides of the double bond.
